Yummy Veggie Slaw

Hello...I hope y'all are having a good Saturday!

Rarely is it that I do a post on a Saturday and actually,
rarely is it that I do a recipe post....period!
But today I made this delicious slaw and I wanted to share it with you.
Now like many things I make, I kinda just made up it up and tasted it as I went along.
I mean, it's slaw dressing after all...not gourmet cooking!


It all started yesterday after I purchased this bag of shredded veggies at the grocery.
I have had the broccoli slaw many times before and it is delicious but when I looked closer,
I realized this was something a bit different...it's called Super Blend...
...and it is a super blend...just look at the ingredients!



I wrote this post on a whim and should have taken the photo of the bag when it was full.
It would have been so much more pleasing to the eye...oh well.
There were no serving suggestions on the bag but right away my mind went to coleslaw.
I toyed with the idea of just buying a jar of Marzetti's Slaw Dressing but decided to make my own.
Now I usually don't really measure and of course you can always use your own recipe,
but here is my best guess off the top of my head...

               *an almost empty jar of mayonnaise (maybe 1/3 cup)
*a couple of sloshes of apple cider vinegar (maybe 1/4 cup)
*6-8 packets of stevia sweetener (more or less, according to your taste)
*fresh ground black pepper

I put the vinegar in the nearly empty mayo bottle and shook it to get it all out. 
Like I said, I'm completely guessing at these measurements...
...but isn't life really all about guesswork anyway?


 Mix it all together and refrigerate...but of course you can eat it right away if you choose.
I always like to let it marinate in the dressing awhile.


Now here in NC, most of us eat slaw with our pork barbecue and I'm not talkin' about as a side...
...we eat the slaw on the barbecue...on the bun.
So when there is no barbecue in sight but there's a dab of left over sloppy joe meat in the fridge,
well, it was a pretty good substitute!


It was so good, y'all!


I added a few veggie sticks for some extra added crunch...


...almost like fries but probably a bit better for you...maybe...just a bit.
And that was my lunch!
It really was so much better than your regular run-of-the-mill coleslaw 
and I will definitely be making it again...


...if I can remember my recipe!

  3. That looks fabulous! You might like to allow foods to marinate, but I usually just dive in. That’s a good way to enjoy those veggies...and the only way I’d be willing to try it. You can do more Saturday recipe posts. 😊 (I will try that burger/bbq slaw combo one day, too.

    1. I didn't say I "like" to let it marinate...only that it's better if you do. Let me make it clear, I did NOT let this marinate before putting it on my sandwich! :D It really was pretty tasty!

  5. Looks super good. I've never put slaw on the sandwich before.

    I no longer get comments in my email either. I'm pretty sure it is going to stay like that too.
    I read that Blogger has made some other changes too.
    I've been blogging many years now and they've made changes before and we just have to get used to them.

    Wish they would stop trying to 'improve' things. : )

  8. I have used that blend in with a regular bag of cole slaw mix and it is so good and I sometimes use Ranch dressings as the base and it's so good. I often just eat a bowl with a couple of saltine crackers and "call it good." Thanks for sharing!

  9. I have not tried that blend, Debby, but I am now after your recommendation. That's about how I make my cole slaw, too. My mom used to make it with sugar, but I use a sugar substitute now.
    No, I'm not getting comments emailed to me...I have to look on my comment section on my blog. I hope they fix it, but I wouldn't count on it.

  10. This looks so good! I will check out the blend. I love a good slaw and I am picky about whose slaw I eat. Maybe it's old age or something. I made some sliders once and put slaw in the bun. It was surely a different type of texture but good. Girl, I am bad about putting potato chips on my ham sandwich too. LOL! I just love a good crunch. Hugs and blessings, Cindy

  11. Oh, how yummy!!! I love making my own slaw dressing, too, and I use exactly what you do...well, I always used mayo, vinegar, and sugar, but now I substitute the sweetener. I recently have been getting into the Trim Healthy Mama products, and, oh, my! I love their "gentle sweet." They tame down the strong Stevia taste with 2 other ingredients. I am using it in my coffee instead of honey to cut way down the carbs. I never thought of using this type of assortment in the place of the plain cabbage or cabbage carrot mix. This is a great idea!! Thanks so much for sharing...and, I know what you mean about the slaw on the BBQ sandwiches. I had never heard of doing that until I saw my husband do it, and now, there is just NO going back for me! I love it. Also, we butter and brown our buns in a skillet, then put the BBQ (or sloppy joes - we've done both, too) on the bottom bun and the slaw on the top bun. Whew, you talk about good...and the browned buns adds an extra crunch. Okay, now you have made me hungry, and I just ate! Sending love and hugs to you, sweet friend. :)
